Buffalo Chicken Burgers


1 lbs ground chicken breasts
1/4 cup Franks hot sauce
1 tsp garlic powder
1 tsp onion powder
1 Tbls dried parsley (or fresh)
1 Tbls dried chives (or fresh)
1/2 cup Panko breadcrumbs

Extra: for the burger
good buns, toasted
gorgonzola cheese or blue cheese
lettuce
tomato
olive oil
flavored vinegar
salt and pepper

Mix all the ingredients in large bowl. Form in patties. I made 4 patties.

Grilled until internal temp 165 degrees. Don't overcook or it will be dry. 

For the lettuce. I  added a drizzle of olive oil, vinegar and salt and pepper. Mixed it and added it to the burger with cheese and tomatoes.

Sloppy Joe From Scratch


2 lbs ground lean hamburger
4 cloves garlic 
15 oz tomato sauce
2 Tble BBQ sauce
1 cup ketchup
4 Tbls brown sugar
4 Tbls Worcestershire sauce
2 tsp prepared yellow mustard 
1 tsp garlic powder
1/2 tsp onion powder
1/2-1tsp ground black pepper


Brown hamburger is a large pot. Once cooked, add garlic and cook a few minutes.

Add the rest of the ingredient to the hamburger. 

Simmer until thick. Around 20-40 minutes.  

Serve on a toasted bun with pickles, cheese or jalapeƱo's. 


 GET A DEEPER POT TO COOK IT IN SO IT DOESN'T BUBBLE AND SPLASH AS IT SIMMERS.

Artichoke Spinach Dip



Artichoke Spinach Dip

8 ounces cream cheese, softened
1 cup mayonnaise
2 cups packed fresh spinach, chopped small
14 ounces can of artichoke hearts, drained and chopped
1 cup grated parmesan cheese
1 cup grated mozzarella cheese
1 tsp garlic powder
bread or crackers for dipping

In a large bowl, mix cream cheese until smooth.  Blend in mayonnaise, chopped spinach and chopped artichoke hearts. 
Mix in parmesan, mozzarella and garlic powder until smooth. 

Spread in a pan  and bake at 350 degrees for 25-30 mins.

Or 

If you want the dip on a piece of baguette slice, spread the dip all the way to the edge of the baguette slices. Arrange the baguettes on a cookie sheet. 
Broil for 2-3 minutes.  or until golden brown. 

Or

If you want the dip in a sandwich, take really good bread like french bread, cut it open, spread mustard on both sides of bread (open faced), add sliced turkey slices on each piece of bread.  Spread artichoke dip on both pieces of bread (on the turkey slices)
Broil the sandwich (open faced) for 4-6 minutes until dip is golden brown.
Take the sandwich out of the broiler, let cool.  When cool, close the sandwich together and enjoy. 

Or

If you want the dip in a stuffed mushroom, take the stem off the mushroom and stuff with the dip. Bake for 20-30 mins until dip is golden brown

Curry Chicken Salad Sandwich



Curry Chicken Salad Sandwich


2 1/2 cup chopped cooked chicken
1/3 cup finely chopped celery
2 TBLS grated onion
1/2 cup mayo
2 TBLS sour cream
3/4 tsp curry powder
1/8 tsp cajun seasoning
Lettuce 
Tomato
Bread or croissant

Blend chicken, celery, onion in a large bowl.
In a small bowl mix mayo, sour cream, curry powder, cajun seasoning.
Mix mayo mixture with chicken mixture.
Serve curry chicken salad on any kind of bread with tomato and lettuce if you want.

Sloppy Joes with Gumbo Soup


Sloppy Joes with Gumbo Soup

2 lbs hamburger
dash of garlic powder
1/2 of a small onion, chopped
15 oz can of tomato sauce
1 1/2 packages of McCormick sloppy joe seasoning mix
1 can of Campbell's gumbo soup
1 TBLS of BBQ sauce

Browned the 2 lbs of hamburger and then drain the fat.  Add all the other ingredients and simmer on low for 20 mins.  Then I added it to a crock pot and put it on keep warm.


ALTERNATIVE RECIPE:
if you don't have the McCormick seasoning mix i used this recipe below

3 lbs hamburger
lots of pepper
1 chopped onion
3 tsp minced garlic (i used fresh garlic minced in a jar)
3 tsp chili powder
2 tsp dry mustard
1 tsp red pepper flakes
worcestershire sauce several dashes to your taste
salt just a sprinkle
1 3/4 cup ketchup
2 TBLS of brown sugar
1 can gumbo
3 TBLS BBQ sauce
water if needed at the end

Fry the hamburger, drain.
Add in pepper, onions, garlic, chili powder, dry mustard, red pepper flakes,  worcestershire sauce and salt. cook a few minutes.
add ketchup, brown sugar, gumbo and BBQ sauce.
Simmer, add water if needed.

Beef Barley Crockpot 2 lbs beef chuck cut into chunks 1/2 lbs carrots diced 3 celery diced 1/2 large yellow onion chopped 2 tsp dried thyme ...
