Peanut Butter Balls



1 1/2 cups rice crispy cereal, measure out then crush
1 cup smooth peanut butter, I use natural
6 TBLS soft room temperature butter
1 3/4 cup powdered sugar
semi sweet chocolate chips, enough to melt and dip the balls

Mix the peanut butter and butter

Add powdered sugar then add rice crispy cereal.

mixture will be thick. 

roll in balls, I use a small ice cream scoop

place in refrigerator for 30 mins. (I was impatient and didn't chill them and it worked)

Melt chocolate chips in microwave at 15-30 second intervals until melted.

Dip the peanut butter balls, place on parchment paper to harden.

when hard, place in mini muffin papers.

Makes around 40 balls depending on the size.

Baked French Toast




Baked French Toast

16 ounces of french toast bread
8 large eggs
2 cups half and half
1 cup milk
2 tbls sugar
1 tsp vanilla
1/4 tsp cinnamon
1/2 tsp nutmeg
dash of salt

Praline topping

2 sticks of butter (1/2 lbs)
1 cup packed brown sugar
2 tbls light corn syrup
1/2 tsp cinnamon
1/2 tsp nutmeg

Slice french bread into 20 slices, 1 inch each.

Arrange slices in a generously buttered 9x13 dish in 2 rows, overlapping the slices.

in a large bowl combine the eggs, half and half, milk, sugar, vanilla, cinnamon, nutmeg and salt. beat until blended. 

pour the mixture over the bread slices, making sure all are covered evenly with the milk/egg mixture.  

Spoon some of the mixture in between the slices.

Cover with foil and refrigerate overnight


The next day, make the praline topping mixing everything together in a bowl.

spread or dot praline topping over the soaked bread.

Bake at 350 degrees for 40 minutes uncovered.

Pour syrup over slices and enjoy. 










King Crab Legs

old bay seasoning
lemon
melted butter

We got 3 king crab legs, defrosted in the refrigerator.

once water is boiling add juice from 1/2 lemon and old bay seasoning to the boiling water,

Add crab legs to boiling water and boil for 7 minutes.

Enjoy.


I have never made crab legs before and that is how we made them. 

I googled recipes on the internet and some say don't boil them, defrost, don't defrost.

Some say steam them. 








Prime Rib




Boneless Prime Rib

6 lbs boneless prime rib
salt and pepper

Take the prime rib out of the refrigerator 3 hours before you cook it so it is room temperature.

Salt and pepper your prime rib.

When it is ready to cook, turn your oven on to 450 degrees.

When the oven is ready, put in your prime rib and bake high temperature for 15 minutes.

Then turn the temperature down to 350 and bake until internal temperature is 155.

Take the prim rip out of the oven and cover with tinfoil.

Let it sit for 30 minutes before cutting into it. 







Cookie Salad


Cookie Salad

1 box (3oz) of instant vanilla pudding
1 cup buttermilk
15 ounce canned pineapple chunks, drained
8 ounce cool whip, thawed
15 fudge stripped cookies, crumbled


In a large bowl, stir pudding with buttermilk until well combined
Stir in pineapple tidbits
fold in cool whip
Add cookies right before you eat it.  Reserve a few cookies to crumble on top for garnish.


I made this salad the way the recipe reads above and made a small bowl of it.  
You can add half pineapples and half mandarin oranges if you want. 
You can double the recipe below:

2 (3.4 oz) packages vanilla instant pudding
2 cups buttermilk
1 20 oz can pineapple tidbits, drained
2 (11oz) can mandarin oranges, drained
12 oz cool whip
1 package of fudge striped cookies

Cranberry Buttermilk Breakfast Cake


Cranberry Buttermilk Breakfast Cake

1/2 cup unsalted butter, room temperature
zest of 1 lemon
1 cup plus 1 Tbls sugar
1 egg, room temperature
1 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp kosher salt
2 cups fresh cranberries
1/2 cup buttermilk

Preheat oven to 350 degrees. 
Cream butter, lemon zest and 1 cup of sugar until light and fluffy.

Add the egg and vanilla, beat until combined.  

Add the buttermilk and stir until combined.

Add the flour, baking powder, salt and cranberries.

Add the dry ingredients with the butter mixture until combine.

Batter will be thick.

Pour into a greased 9 inch square baking pan.

Sprinkle the 1 Tbls of sugar on top.

Bake for 35 mins until set.

My cake was light color on top but the tooth pick came out clean.

It was soft and delicious.

Blueberry Buttermilk Breakfast Cake
1/2 cup unsalted butter, room temperature
zest of 1 lemon
3/4 cup plus 2 Tbls sugar + 1 tbls sugar on top of cake
1 egg, room temperature
1 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp kosher salt
2 cups fresh cranberries
1/2 cup buttermilk

Same recipe except less sugar because cranberries are tart and need more sugar.

Pork Rib Roast

Pork Rib Roast

3 lbs Pork rib roast
fresh herbs, rosemary, sage and thyme, chopped
olive oil (or garlic olive oil)
salt and pepper

Have rib roast at room temperature.
Mix chopped herbs and olive oil to make a paste
Salt and pepper the roast
Rub the herb olive oil paste all over the roast.

325 degree baked uncovered until internal temperature is 150 degrees. 

Take out of oven, tent with aluminum foil and let rest and internal temperature raises to 160 degrees. 

cut and serve, enjoy. 


cook time was in my wolfgang puck pressure oven for approx 50-60 minutes.

Chicken Sausage and Shrimp Dirty Rice

I found this recipe online. I made it for Christmas Eve dinner and it turned out so good.  I made a few adjustments.  I added sweet potato instead of butternut squash. Try it you will really like it.


Chicken Sausage and Shrimp Dirty Rice

3/4 cup Jasmine rice ( cook with 1 cup water)
1/2 cup wild rice (already cooked from a can)
2 medium sized sweet potatoes (around a total pound)
1/2 lbs cauliflower, cut into florets
2-3 tbls olive oil
3/4 tsp cajun seasoning
2 andouille chicken sausages (cut into pieces and brown)
1/2 medium yellow onion diced
2 stalks celery, chopped
1/2 large green bell pepper
2-3 tbls olive oil
2 large garlic cloves, minced
1/2-1 tsp cajun seasoning
3/4 tsp paprika
1/4 tsp crushed red chilies
1/4 tsp dried thyme
1 can 14 ounce diced tomato
1/2 cup chicken stock

sea salt and freshly ground black pepper to taste

8-12 Jumbo shrimp with shell on and butterflied open
2 tbls fresh parsley, chopped

DIRECTIONS

Preheat oven to 375 degrees

on a baking tray toss sweet potato and cauliflower with oil and seasoning, roast in oven until tender.

Meanwhile cook the rice in a pot with water. Drain wild rice and mix together.

In a large pan sauté sausage until browned, remove from pan. 

In the same pan, sauté onions, celery and bell peppers until tender, adding more olive oil if necessary. 

Add garlic, cook for a minute then add remaining spices and cook for another minute. 

Add tomatoes and stock, simmer on low until mixture has thickened, approximately 15 minutes.

Add Shrimp cook until cooked through stirring at times.

Fold in cooked rice, sausage, sweet potato and cauliflower, adjusting seasoning to taste with salt and pepper.

Sprinkle fresh parsley on and serve. Yum.



if you can't find cooked wild rice in a can just make your own.

Baked Cheesy Hash Browns

This recipe from the internet and I modified it to my liking.  When you mix the hash browns up it will not be soupy, it is thick.  When it cooks it gets creamy cheesy with crunchy panko bread crumbs on top. 

2 lbs frozen hash browns
1/2 cup onions chopped
8 oz sour cream
1 can cream of chicken soup
2 cups shredded cheddar cheese
1 tsp salt
1/4 tsp pepper
1/2 cup butter melted
1 cup panko bread crumbs

mix has browns and chopped onions
blend sour cream, chicken soup and cheese. 
stir into mixture
grease 9x13 pan and pour into pan.
mix melted butter with bread crumbs, pour on top
bake 350 for 1 hour 15 mins
