White Bolognese Sauce

1 lbs good quality ground sausage 

2 Tbls olive oil

2 ounces pancetta diced

1 medium yellow onion, chopped

1 celery, shipped

1 carrot chopped

2 cloves garlic minced

1 individual mini white wine

1 tsp fresh rosemary chopped

1 tsp fresh sage chopped

1/4 tsp ground nutmeg

1 tsp salt

1 tsp pepper

1 1/2 cup chicken stock

1 cup whole milk

1 lbs dried pasta

grated parmigiano reggiano to serve

Fry sausage and pancetta and 1 tbls olive oil until cooked, remove to paper towel

add 1 TBs olive oil to pan and cook carrots, onions and celery until cooked down

add garlic cook 1 minute

add rosemary, sage, nutmeg, salt and pepper

add white wine until evaporated

add chicken stock

cook on low for 30 minutes to reduce

after 30 mins add half of the milk, continue to simmer on low for 30 minutes

add the rest of the milk and continue to simmer until liquid gone

cook pasta al dente 

add pasta to sauce

add parmigiano reggiano,

enjoy

Butternut Squash Ravioli




Butternut Squash Ravioli

FILLING
1/2 a butternut squash, peeled and diced
olive oil
salt and pepper
1/4 cup parmesan cheese



Roast butternut squash cubes in a pan with olive oil, salt and pepper until soft.

Take out and mash

Add parmesan cheese

If it is dry add some melted butter

I then put it in a small zip lock bag and put in the refrigerator.


PASTA
1 1/2 cup flour
2 eggs
1 Tbls olive oil


put flour in large bowl, add a well in the middle, add eggs and olive oil. 
Mix until mixed. 

then kneed for 10 minutes on the counter. 

wrap with plastic wrap and let it rest for 20 mins



I eat these ravioli's with Better than Olive garden Alfredo sauce.

Creamy Dill Cold Pasta

Creamy Dill Cold Pasta


8 ounces dried medium shell pasta
1 cup mayonnaise
1/4 cup sour cream
1 1/2 Tbls fresh squeezed lemon juice
1 1/2 Tbls dijon mustard
1 Tbls dried dill (or 1/4 cup fresh dill)
1/4 tsp ground cracked black pepper
1 stock diced celery (or 1/2 cup)
2 tomatoes seeded and  diced (optional, I didn't use it but I think it would be good)
3 Tbls minced shallots
2 chicken breasts, cooked and diced
Or you can add cooked shrimp or cooked salmon
1/2 cup frozen peas



Cook the pasta shells according to the package. drain and rinse cold

In a small bowl, add mayo, sour cream, lemon juice, mustard, dill and pepper.
Mix until combined.

Add celery, tomatoes, chicken and shallots.

Meanwhile at the last minute of cooking the noodles, add in the frozen peas to warm them up.

Drain pasta and peas and rinse with cold water. drain really well. 

Add pasta/peas to the mayo mixture. Mix and refrigerate at least one hour to blend flavors.

Cheeseburger Lasagna





Cheeseburger Lasagna

1 lbs ground hamburger
1 can tomato sauce 15 ounces
1/2 cup ketchup
1 tbls yellow mustard
1 cup water
1 cup cottage cheese
1 goat cheese (I think it was 4 oz or 3?) I just had it in my refrigerator you can omit this
thinly sliced dill pickles, I had baby dill and i slice 3 thin
cheddar cheese
9 no boil lasagna noodles (I only used 7 because I ran out of them)




Brown hamburger, drain fat.  

Add in can tomato sauce, ketchup, mustard and water. Cook a few minutes to blend flavor. Turn off heat.

Blend cottage cheese and goat cheese.

I used a 9x7 pan, a small pan because i like to make a small pan of lasagna…..Spray pan. 

Add small amount of  tomato sauce on bottom of pan. 

Layer 3 noodles, then more sauce, cottage cheese mix, sliced pickles, some cheddar cheese.

Repeat layer, noodles, tomato sauce, cottage cheese, pickles and cheddar cheese.

Bake 350 degrees covered for 30 minutes, take foil off and bake another 10-15 minutes until brown and bubbly. 

Take out of the oven, let rest 10-15 minutes before cutting into it.  



*****I only had 7 noodles. if you can use 9 noodles, make 3 layers.

Pasta Dough

PASTA DOUGH:

1 1/2 cup Semolina Flour
1/2 tsp salt
2 eggs
2 TBls water
2 Tbls olive oil

Combine semolina and salt.  Add beaten eggs, water and oil in the center of the flour.  Slowly blend until it makes a stiff dough.  Knead 10 minutes or until the dough is elastic.  Wrap dough in plastic wrap and rest for 20 minutes.  When ready, on a lightly floured surface, roll our dough using a pasta machine to the number #6. and assemble raviolis. 










Lemon Pasta Dough




Lemon Pasta Dough

1 cup all-purpose flour
1 egg
Zest and juice of 1/2 lemon
1 tablespoon olive oil
1/4 teaspoon salt

In a food processor combine the flour, egg, zest, juice, oil, and salt. Process until dough forms. Depending on the flour, you made need to add a bit of water or more flour. Dump onto a floured work surface and knead until smooth, about 3-5 minutes. Wrap in plastic and let rest on the counter for 10-15 minutes.


 If you look real close you can see the lemon zest in the dough.

Homemade Udon Noodles



Homemade Udon Noodles

3 cups plus 1 TBLS flour unbleached all purpose
1 Tbls salt
1 cup water

put the flour and salt in a food processor, pulse a few times to blend.  
Add the water thru the top slowly until it makes course pellets.

Dump the flour mixture on a clean counter and knead dough for approximately 8 minutes until it becomes softer and smoother. 

Make it into a ball and wrap it in plastic wrap and let it rest for 1 hour. 

Take it out of the plastic wrap. Put it into a large plastic zip lock bag (I didn't have a large bag, so I cut the dough into 1/4th and put it into small zip lock bags.

This is when you use your feet ( REMEMBER IT IS IN A PLASTIC ZIP LOCK BAG AND YOU HAVE CLEAN SOCKS ON) to press out the dough flat, then fold the dough in half and step on it again until flat. Do this a couple of times until it becomes smooth. This gives you the texture and chewiness of the noodle. 

Roll the dough into a ball, place in zip lock bag and let rest for 1 hour.

Take the dough out of the bag, use a noodle press, pasta machine or roll it out flat and cut it by hand to make the noodles. 

Boil for around 3 minutes, drain hot water and put noodles in cold water to stop the cooking. Then use your noodles however you like. You can make this with the noodles if you would like:
