Sausage Potato Breakfast Casserole

 

Sausage Potato Breakfast Casserole

1 Lbs breakfast sausage cooked

1 lbs refrigerated diced potatoes (simply potatoes) seasoned

8 ounce shredded cheddar cheese, divided

7 eggs 

1/2 cup 2% milk

salt and pepper


Pre heat oven to 350.

Cook sausage until cooked and cool

mix eggs and milk until mixed

add sausage and potatoes to egg mixture, add salt and pepper 

mix in 3/4 of cheese, leaving some to top at end of cooking

Spray a 9x13 pan with cooking spray

pour in egg mixture. 

bake for 35 mins

top with remaining cheese and bake another 15-20 mins

**** if you want to make it the night before mix everything except the topping cheese. cover and keep in refrigerator over night. 

Next morning bake longer maybe 40 minutes until almost set,

add cheese and cook another 10 mins

Bread Pudding


  8 oz Cinnamon Bread 

3 eggs

1/4 cup brown sugar

1/4 cup white sugar

1/2 cup whole milk

1 cup heavy cream

1 tsp vanilla

1/2 tsp cinnamon 

1/4 tsp nutmeg


Optional: (2 TBLS white sugar plus 1 tsp cinnamon Optional) sprinkle in between half the mixture and then on top of mixture in pan before baking

optional: mini chocolate chips sprinkle in middle and some on top


Mix all the ingredients together except for the bread. Tear the bread in pieces and add the to custard ingredients. Let sit for 20 minutes.

Pour into a greased (with lots of butter) 8x8 pan.  

optional: I poured half the bread mixture in the pan, sprinkles some of the cinnamon sugar over the top, then added the rest of the bread mixture and sprinkles some of the cinnamon sugar mixture on top. I did not use all of the cinnamon and sugar mixture. Use as much as you like. 

I also sprinkled mini chocolate chips in the middle and top of bread mixture.

Bake 350 degrees for 50-60 minutes until center set. I cooked for 50 mins in 8x8 pan. 


you can double the recipe to Make a 9x13 pan. recipe called for 5 eggs. but you could try 6 eggs.

Breakfast Bake



2 TBls butter
1 small yellow onion diced
Add ins that I used:
chopped Kale 1 large leaf (or fresh spinach)
jalapeƱos
goat cheese half of a small roll 2 ounces

3 sausage patties maple flavored, unthawed and chopped

2 cups thawed shredded hash browns

8 eggs 
1/3 cup 2% milk
salt pepper
franks hot sauce a few splashes
1 cup cheddar cheese or goat cheese 2 ounces

In a sauce pan melt butter and cook onion, kale, jalapeƱo (or other add ins) and the diced sausage to soften and brown. 

mix eggs, milk, salt, pepper, hot sauce and goat cheese or  1/2 cup cheddar cheese, If using

add in onion mixture to the eggs and add in hash browns.

add 1/2 cup of cheddar cheese on top 

Bake 350 degrees for 30-40 mins until egg is set.

I used a smaller dish than a cake pan 9x13. my pan was probably 7 x11 or so.


add ins to use:
red bell pepper
mushrooms
tomatoes

Chicken Sausage, Kale, Gruyere Cheese Quiche



9 inch deep dish frozen crust (you can make your own)
1 cup shredded gruyere cheese (or any kind, I had gruyere to use up)
Kale, sliced thin to cover the cheese maybe 1/2 cup (or spinach)
Onions, finely diced around 2-3 Tbls 
5 chicken sausage links, that were precooked and frozen, I thawed in microwave and diced. 
(I got these chicken links frozen from Costco. Use any links or ham or bacon, make sure they are cooked)
6 eggs
1 1/2 cup heavy cream or whole milk
salt and pepper to taste (you can add a splash of hot sauce or Cheyanne pepper)

optional: I added some feta cheese crumbles on top of the eggs for a salty tangy flavor because I had some in my refrigerator.


preheat oven to 375 degrees.

Take deep dish out of freezer, add shredded cheese, kale, onions, sausage in the shell in that order. You want the cheese on the bottom. 

mix the eggs and heavy cream in a large bowl. add salt and pepper.

Pour egg mixture over cheese, kale, sausage. 

add feta on top if you want.

put on a cookie sheet lined with tinfoil.

bake for 45 mins until middle set. 

Let cool before cutting.

Oatmeal Cups

I found this recipe online and made it with raspberry and chocolate.  They turned out delicious.  So I made the one with blueberry and again delicious.  I will keep trying different flavors and add as I make them.

3 cups gluten free oatmeal 
1/8 tsp salt
3/4 tsp cinnamon
1 tsp baking powder
2 tsp melted coconut oil (you can use olive oil)
1/3 cup maple syrup (real maple syrup, not the fake kind)
1 egg
1 1/2 cup almond milk

This is the base for the oatmeal cups. Add in whatever you want for different flavors.

Makes 9 cups

Don't use liners they stick.

spray the muffin pans or use melted coconut oil to grease the muffin cups.

Bake 375 for 20 mins. Let cool for 10 mins before taking out of muffin tin

Raspberry chocolate:
add in 2 TBls raspberry preserve
1/4 semi sweat chocolate chips 

Blueberry:
add in frozen blueberries, fresh work also.

Baked French Toast




Baked French Toast

16 ounces of french toast bread
8 large eggs
2 cups half and half
1 cup milk
2 tbls sugar
1 tsp vanilla
1/4 tsp cinnamon
1/2 tsp nutmeg
dash of salt

Praline topping

2 sticks of butter (1/2 lbs)
1 cup packed brown sugar
2 tbls light corn syrup
1/2 tsp cinnamon
1/2 tsp nutmeg

Slice french bread into 20 slices, 1 inch each.

Arrange slices in a generously buttered 9x13 dish in 2 rows, overlapping the slices.

in a large bowl combine the eggs, half and half, milk, sugar, vanilla, cinnamon, nutmeg and salt. beat until blended. 

pour the mixture over the bread slices, making sure all are covered evenly with the milk/egg mixture.  

Spoon some of the mixture in between the slices.

Cover with foil and refrigerate overnight


The next day, make the praline topping mixing everything together in a bowl.

spread or dot praline topping over the soaked bread.

Bake at 350 degrees for 40 minutes uncovered.

Pour syrup over slices and enjoy.

Cranberry Buttermilk Breakfast Cake


Cranberry Buttermilk Breakfast Cake

1/2 cup unsalted butter, room temperature
zest of 1 lemon
1 cup plus 1 Tbls sugar
1 egg, room temperature
1 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp kosher salt
2 cups fresh cranberries
1/2 cup buttermilk

Preheat oven to 350 degrees. 
Cream butter, lemon zest and 1 cup of sugar until light and fluffy.

Add the egg and vanilla, beat until combined.  

Add the buttermilk and stir until combined.

Add the flour, baking powder, salt and cranberries.

Add the dry ingredients with the butter mixture until combine.

Batter will be thick.

Pour into a greased 9 inch square baking pan.

Sprinkle the 1 Tbls of sugar on top.

Bake for 35 mins until set.

My cake was light color on top but the tooth pick came out clean.

It was soft and delicious.

Blueberry Buttermilk Breakfast Cake
1/2 cup unsalted butter, room temperature
zest of 1 lemon
3/4 cup plus 2 Tbls sugar + 1 tbls sugar on top of cake
1 egg, room temperature
1 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp kosher salt
2 cups fresh cranberries
1/2 cup buttermilk

Same recipe except less sugar because cranberries are tart and need more sugar.

Southern Biscuits with no Buttermilk


Southern Biscuits with no Buttermilk

2 cups unbleached all purpose flour (i used bleached and from the freezer)
1/4 tsp baking soda
1 Tbls baking powder-use without aluminum (i didn't)
1 tsp kosher salt
6 Tbls unsalted butter very cold (i used salted and from the freezer)
1 cup buttermilk ( i didn't have buttermilk, i put 1 Tbls white vinegar in a 1 cup measuring cup then added 2 % milk to equal 1 cup, put the cup in the refrigerator while i mixed the flour)


Pre heat oven to 450 degrees

Combine dry ingredients in the food processor.
Add frozen butter in slices
pulse until pea sized butter
add in buttermilk until just combined. Don't over mix.

Turn the dough out on a floured surface.

Gently, gently pat the dough out until it is about 1/2 inch thick. 
Fold the dough in half 5 times turning the dough each time, gently press the dough down to a 1 inch thick. (if your hands are hot gently use a rolling pin)

Cut the dough in circles, cut down and up, don't twist the circle cutter or your biscuits will be lopsided. 

Place on a baking pan not touching each other. I like them brown on all sides.  If you like them softer on the sides you can make them all touch each other. 

Bake for 10-12 (i baked them for 10 mins. i think i should of baked them for 11 mins.) 

Don't over bake the biscuits. So watch them.

Biscuit Breakfast Casserole

I make biscuits and gravy a lot and I had made a bunch of biscuits one day so I needed something to do with them so they didn't go to waste.  I found this recipe on the internet and made it.  It was a great way to use up your biscuits. I added 2 extra eggs in my recipe because I don't like my casseroles dry. 


Biscuit Breakfast Casserole

6 biscuits broken in pieces
1 lbs jimmy dean breakfast sausage
3 Tbls flour 
1 1/2 cup milk
6 eggs
2 cups milk
salt and pepper to taste
1 cup of cheddar cheese

Spray a 9x13 baking pan with pam, add the broken biscuits to the pan.
Cook the 1 lbs sausage in a pan, when cooked add 3 Tbls flour to the cooked sausage, stir until well combined and cook for a few minutes to cook out the raw flour taste. add pepper if you like lots of it like me. 
slowly add 1 1/2 cup milk to the sausage. stir until combined, simmer for a few minutes until slightly thick.
Add the sausage gravy over the biscuits in the baking pan.

combine the 6 eggs, 2 cups of milk and salt and pepper to taste.  pour the eggs over the biscuits and sausage.  
add 1 cup of cheese over the top.

let it sit for 30 minutes or up to 10 hours in the refrigerator overnight. 

bake 350 degrees for 35- 45 minutes

The Best Bran Muffin





The Best Bran Muffin

1/2 c butter, softened
1   1/4 c sugar
2 eggs
1 pint buttermilk
1 cup wheat germ original toasted
2 cups all bran kelloggs
1 c boiling water
2  1/2 c flour
2  1/2 tsp baking soda
1 tsp salt

Mix the 2 cups All Bran Kellogg's and boiling water and let stand (add to muffin mixture last of all). 
Mix the butter, sugar, eggs, and buttermilk in a large bowl.    
Mix flour, baking soda, salt and wheat germ to a small bowl.  
Mix the All Bran Kellogg's into the liquid bowl (butter, sugar, eggs and buttermilk) mix well.
Add the flour mixture to the wet. Mix well
 Put in lined Muffin tins 3/4 full, bake for 20 mins at 400 degrees

This batter keeps for 2 months in the refrigerator.

Bread Pudding Bake


Bread Pudding Bake

10 oz bag dried stuffing bread or 8 cups cubed day old bread
9 eggs
2 1/4 cups whole milk
1 3/4 cup heavy whipping cream
1 cup sugar
3/4 cup melted butter
3 tsp vanilla extract
3 tsp ground cinnamon
cinnamon and sugar sprinkled on top

get a large baking pan (I used a 4 qt 15 x 10 Oblong Pyrex Baking Dish) spray with cooking spray.  Put bread in baking pan.  
In a large bowl, mix together, eggs, whole milk, heavy cream, sugar, extract and cinnamon. Mix until combined.  Drizzle butter over bread. Pour egg/milk mixture over the bread.  
let the bread soak up the egg/ milk mixture. Sprinkle as much cinnamon/sugar over the top of the bread.
bake 350 for 40-45 minutes, until set and a knife comes out clean.

serve warm with syrup over the top. optional, whipping cream



Sausage Casserole



1 lbs Jimmy Dean Sausage
3-4 cups shredded potato hash browns, thawed and drained
1/4 cup butter melted
12 oz mild cheddar cheese, shredded
1/2 cup onion, shredded
16 oz container small curd cottage cheese
6-7 jumbo eggs

Brown the sausage in a pan and drain.  Mix hash browns and butter. Press into a 9x13 baking pan.  Mix the sausage, cheese, onion, cottage cheese and eggs.
Pour over hash browns.
Bake 375 degrees
Bake 1 hour in the preheated oven, or until a toothpick inserted into the center of the casserole comes out clean.  Let cool for 5 minutes before serving.

you can add green peppers if you would like that. 
you also can use 1 lbs maple flavored sausage links, cook and rough chop

Biscuits and Gravy

This biscuits and gravy is so easy and simple to make.  I have been making it for years for my kids.  My daughter loves my biscuits and gravy recipe so much that when she goes to a restaurant for breakfast, she will order biscuits and gravy and she doesn't like it.  She is so used to my recipe.  It is nothing fancy, but very easy to make. 
RECIPE:
1 lbs jimmy dean ground sausage
1/2 cup flour
4-5 cups of milk (i used skim milk)
1/4-1/2 tsp pepper (i used 1/2 tsp i like it spicy)
1 can Pillsbury biscuits


First, turn on your oven and get your biscuits cooking while you make the sausage and gravy.  Next, you brown your sausage in a pan until done.
 Sprinkle in the flour a little at a time and stir in between sprinkles. It will seem dry but keep sprinkling and stirring.  Cook for a few minutes to cook the flour taste out.  The flour mixes with some of the fat of the sausage. So don't drain the sausage.  If you use Jimmy Dean, there is little fat released in the pan.

Sprinkle in 1/4-1/2 tsp pepper at this time depending on your taste.

 Add milk, 1 cup at a time and mix in between.  I use 4 1/2 -5 cups.  We like our gravy a little thinner than most, so put in the milk and stop when you like the consistency.  cook on medium to low heat, don't let it boil and stir at all time. 
 When the gravy is at your consistency, it is done.
pour your sausage and gravy over your biscuits and enjoy.
